  1. This is my one pot Moroccan biriani. Lamb shoulder slow cooked for 4h at 120-130c. Sear the lamb shoulder/ leg or shanks add a mixture of Moroccan spices, (cinnamon stick, coriander seeds, paprika etc... make your own blend or use a good pre bought Ras el hanout mix ), whole prunes, onions, garlic, lamb or chicken stock and wine, about 1 glass of wine and enough stock to just leave the top of the lamb visiable (all depends on your pot), cover with a lid and place in the oven. When the lamb is melting off the bone add the rice straight into the pot with the meat, spices and juices, if necessary add a little water, place back in the oven until fully cooked, around 30mins. Serve with some fresh mint, chilli flakes and pomegranate seeds. It's a long cooking process but very easy and a one pot dish which is great for washing up! DELICIOUS!
